This is a family favourite. This recipe was handed down to my mother from my gran. It brings back so many memories of my childhood every time I eat it.
Chicken pieces with skin
1 Tbsp olive oil
1 cup water
1/2 cup mayonnaise
1/2 cup chutney (peach chutney is the best)
Splash Worcestershire sauce
1 sachet brown onion soup
Preheat oven to 180*C/356*F
On the stove, brown the chicken in the oil, skin down, till the skin is nicely browned
Mix the water, mayonnaise, chutney, Worcestershire sauce and brown onion soup
Place the chicken, skin up, in an oven proof dish and pour the mayo mixture over the chicken.
Place in the oven for approx 30 minutes, till the sauce has thickened and the chicken is cooked through.
Serve with rice and vegetables of your choice. The thickened sauce can be used as gravy.
