Recipe: Toppings for toasted baguette slices

Toppings for toasted baguette slices

Make each topping and present it in a small bowl or platter so that everyone can help themselves to their favourites. Each topping makes about 1 cup.

Topping one:
1 cup just-ripe tomato, diced
1tbsp balsamic vinegar
2 tbsp fresh chives, finely chopped

Topping two:
1/2 cup plain smooth low fat cottage cheese
1/2 cup asparagus heads
A pinch of black pepper

Topping three:
1/2 cup hummus
1/2 cup plain fat free yoghurt
1 tbsp chopped olives

Topping four:
1 cup mushrooms sauted in red wine
2 tbps pepperdews, finely chopped
2 large handfuls of baby spinach on the side

Topping five:
1 cup mashed butternut
1/2 a green pepper, finely chopped
1 tsp dried origanum

Tip Slice the baguette into diagonal strips and toast lightly and place on a platter. Chicken strips, or slices of ham or pastrami are also great when placed on the baguette slices along with these toppings.
