Roasted Butternut Salad with Feta and Chilli:
1kg Butternut, peeled and cut into cubes.
3 tbs Olive Oil
1 tsp Organic Lemon Pepper
200g Feta, cut into cubes
2 bunch Coriander, chopped
3 Spring Onions, chopped
3 Red chilles, finely sliced
Place butternut onto baking tray and drizzle with olive oil and lemon pepper. Bake in a preheated oven 200ºc for 20 minutes until cooked. Allow to cool.
In a large bowl, combine all ingredients and toss salad.
