RECIPE: Easy Chocolate Chip Cookies

Easy Chocolate Chip Cookies

My 5 year old daughter and I make dozens of these every month.  They have become a family favourite

§  1 cup softened butter
§  1/2 cup granulated sugar
§  1 1/2  cups firmly packed brown sugar
§  2 large eggs
§  2 1/2 tsp. vanilla
§  2 1/2 cups all-purpose flour
§  3/4 tsp. salt
§  1 tsp. baking powder
§  1 tsp. baking soda
§  18 ounces semi-sweet chocolate chips

The key to these cookies is not to bake them past the recommended 10 minutes. That way, after cooking they are nice and chewy.
1.    Preheat oven to 350.
2.    In a large mixing bowl, cream together the butter, sugars, eggs and vanilla.
3.    In another bowl , mix together the flour, salt, baking powder and baking soda .
4.    Combine the wet and dry ingredients.
5.    Stir in chocolate chips  .
6.    With your fingers, place golf ball sized portions 2 inches apart on an ungreased cookie sheet.

7.    Bake 9-10 minutes or just until edges are light brown.

RECIPE: Chocolate Chip Pecan Banana Bread

Chocolate Chip Pecan Banana Bread with Cream Cheese Glaze
Banana Bread
·         3 or 4 Ripe Bananas Smashed
·         1/3 cup softened or room temperature butter
·         1 cup sugar (you could reduce this to 3/4 cup if your bananas are extra sweet)
·         1 egg
·         1 teaspoon vanilla
·         1 teaspoon baking soda
·         pinch of salt
·         1 1/2 cups of all purpose flour
·         1/2 cup nuts (chopped) (pecans or walnuts are best)
·         1/2 cup chocolate chips
Cream Cheese Glaze
·         4 Ounces Cream Cheese
·         1/2 Cup Powdered Sugar
·         1 Teaspoon vanilla extract
·         3 or 4 tablespoons of milk
1.    Preheat oven to 350 and grease an 4x8 loaf pan
2.    Cream butter and sugar in a medium sized bowl.
3.    Add egg, vanilla, bananas and salt and beat for at least 30 seconds to both add air to the batter and to break the bananas down.
4.    Add flour and baking soda, beat only until combined. Don't over-mix.
5.    Fold in chopped nuts and chocolate chips.
6.    Immediately pour into the bread pan and bake for 50 - 60 minutes.
7.    Remove from Oven and let sit on a cooling rack in the pan for about 5 minutes. Then carefully turn out of the pan and let cool for 30 minutes (longest 30 minute of your life). Then cover with glaze.

Glaze Instructions:
1.    Beat Cream Cheese and powdered sugar.
2. Stir in vanilla and 2 tablespoons of the milk. Add milk a little at a time until you reached a glaze consistency.

Recipe: Tomato Basil Pasta (Facebook recipe find)

Blow your MIND" Tomato Basil Pasta! - No Straining, just stirring.

Pasta, Tomatoes, Veggie Broth, Olive Oil, and Seasonings (details below)

Throw it all in the pot, INCLUDING the uncooked Pasta, and cook! - Bring it to a boil, then reduce to a simmer. The starch leaches out of the pasta and makes a rich, warm sauce for the noodles. The other ingredients cook right along with the pasta

12 ounces pasta
1 can (15 ounces) diced tomatoes with liquid
1 large sweet onion, cut in julienne strips
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes
2 teaspoons dried oregano leaves
2 large sprigs basil, chopped
4 1/2 cups vegetable broth (regular broth and NOT low sodium)
2 tablespoons extra virgin olive oil
Parmesan cheese for garnish

Place pasta, tomatoes, onion, garlic, basil, in a large stock pot.
Pour in vegetable broth.
Sprinkle on top the pepper flakes and oregano.
Drizzle top with oil.
Cover pot and bring to a boil.
Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so.
Cook until almost all liquid has evaporated – I left about an inch of liquid in the bottom of the pot – but you can reduce as desired.
Season to taste with salt and pepper, stirring pasta several times to distribute the liquid in the bottom of the pot.
Serve garnished with Parmesan cheese.

To make sure that it doesn't burn, turn your plate down to a medium low heat
The sauce will thicken and if its a little to thick, add the milk about 5 minutes before serving
